Elk and roasted red pepper burger

Burgers make the best casual barbecue food. These burgers have creamy goat cheese, roasted red peppers and spinach making them deliciously different and healthier than the standard burger.

1 cup roasted red peppers*, drained
2 tablespoons red pepper jelly*
2 garlic cloves, peeled
salt and freshly ground black pepper

4 slices bacon, finely chopped
1 cup finely chopped green onions
4 garlic cloves, minced
1 lb (500g) ground elk
2 tablespoons red pepper jelly
pinch of salt and freshly ground pepper

2 teaspoons olive oil
2 large onions, thinly sliced
4 hamburger buns, toasted
4 oz (125g) goat cheese, softened
1 cup spinach leaves

To make the roasted red pepper sauce, blend or process all ingredients until smooth; set aside.

To make the patties, combine all ingredients until well mixed. Shape into 4 patties. Cook patties on preheated, greased barbecue or grill pan for about 3 minutes per side or until patties are cooked through.

To make the garnish, heat oil in large frying pan over medium-high heat. Add onions and cook, stirring occasionally, for about 10 minutes or until softened and browned. Spread bottom-half of each bun with goat cheese, top with spinach, patties, onions and red pepper sauce. Add bun tops. Serves 4.

* Roasted red peppers are available in the deli section of most grocery stores or try making your own. Red pepper jelly is generally found with gourmet cheese in most grocery stores.
