Spicy elk lettuce wraps

Healthy and delicious, these wraps make a perfect mid-week dinner.

1 medium romaine lettuce, trimmed
1 1/2 cups crunchy steam-fried noodles
1 cup chopped English cucumber

1 tablespoon vegetable oil
1 1/2 lbs (750g) ground elk
4 garlic cloves, minced
1 tablespoon finely chopped ginger
1/4 cup lime juice
3 tablespoons Thai sweet chili sauce
2 tablespoons fish sauce
2 tablespoons oyster sauce
1 tablespoon soy sauce
2 teaspoons sesame oil
1/4 cup chopped fresh cilantro
1 bunch green onions, chopped
2 medium carrots, grated

Fill lettuce leaves with spicy elk filling. Top with noodles and cucumber.
To make the spicy elk filling, heat oil in a large frying pan over medium-high heat. Add elk and cook, stirring occasionally, breaking up any large pieces, for about 10 minutes or until browned. Add garlic and ginger and cook, stirring for 1 minute or until fragrant. Stir in juice, sauces and sesame oil. Cook, stirring, for about 2 minutes or until hot. Add remaining ingredients. Serves 6.
